| Cooking Guidelines | Pilau Biryani 1kg Mutton/beef/chicken, on bone 750g Basmati rice, washed and soaked for 30 minutes 2 tbsp Ginger paste 2 tbsp Garlic paste 1 Onion, sliced 200g Plain yogurt 175ml Oil Shan Pilau Biryani Mix • Mix 1-2 glasses water, Shan Pilau Biryani Mix, meat, garlic and ginger. Cover and cook on a low heat until the meat is tender (ensure about 1 cup of stock remains in the pot). • Pour the yogurt over the cooked meat. and set aside. • Separately, add the soaked rice and salt to taste to 3 litres of boiling water. Boil the rice until more than half cooked. Remove from the heat and drain thoroughly. • Heat the oil and fry the onion until golden. • Spread half the rice in a pot, add the meat, cover with the remaining rice. Then sprinkle the yellow food colour (optional) and fried onion over it. Cover and cook on a low heat until the rice is tender. Mix the meat and rice before serving. • Serve with fresh salad and raita. |
