If you don't think you'll eat it that quickly, put the dragon fruit in a sealable bag or container and store it in the fridge for up to 2 weeks. For even longer-term storage, cut the fruit up into bite-sized pieces, spread it out on a lined baking sheet, and freeze it overnight.
