| Cooking Guidelines | Remove from fridge 30 minutes before cooking and allow to come to room temperature. Poussin can dry out due to the low fat content, so it is important to baste during cooking, and you could cover with strips of streaky bacon or prosciutto to help the meat stay moist. Roast uncovered in an oven pre-heated to 200°c (gas mark 6) for 40-45 minutes. Check the juices run clear and leave to rest for 10 minutes before serving. |
