Cooking Guidelines 1. Remove the kebab wrapping and set the kebab on the grill. 2. Light burners and regulate gas intensity so the kebab cooks evenly, do not have the burners too close to the kebab as it will burn rather than cook evenly and flavour will be impaired. 3. Slice the kebab thinly, temperature of cooked slices should be in excess of +74°c, a temperature probe can be used for accuracy. 4. If not served immediately, hold the cooked slices of kebab in a bain-marie operating at +63°c minimum. 5. Keep the griddle slices utensils clean at all times and use disposable paper towels rather than cloths as these are more hygienic. 6. It is recommended that any unused product should be discarded and not carried over for next day consumption.
