Cooking Guidelines | Serves: 4 Preparation Time: 15 minutes + overnight marinating Cooking Time: 40 minutes What You Need: 150ml yoghurt 300ml water 2 tsp garlic paste 1 tsp ginger paste 30g Rajah Chicken Masala spice blend 4 chicken breasts, diced 4 tbsp oil 2 onions, diced 2 tomatoes, diced 1 tsp salt Optional garnish 2 tbsp coriander leaves, freshly chopped Method: 1 Place yoghurt in a large bowl, add garlic, ginger and Rajah Chicken Masala spice blend. Blend together with a spoon until smooth. 2 Add chicken and using the spoon, tumble the chicken in the marinade until evenly covered. Cover bowl and place in the fridge for 4 hours or overnight to marinate. 3 Heat oil in a large saucepan, add onions and fry for 15 minutes until soft and golden. 4 Add tomatoes, and fry for 5 minutes until softened. 5 Add chicken and fry for 5 minutes, stirring continuously. 6 Add 300ml water and salt. 7 Cook for 15-20 minutes until the chicken is tender. 8 Garnish with coriander leaves. |
