Cooking Guidelines | We generally like to roast our chicken uncovered so the skin crisps up and turns an appealing golden brown. If the chicken starts to get too dark before it reaches the proper internal temperature, you can tent a piece of foil over the top to protect the skin from burning. Weigh the chicken after it is stuffed to work out the cooking time. Roasting time for chicken is 25 minutes per 500g, plus 20 minutes. To check the chicken is fully cooked use a skewer and pierce into the thickest part of the chicken and then remove the skewer. If the juice that comes out is pink it is not cooked. |
