| Cooking Guidelines | Ingredients: Gather mustard greens, ridge gourd, radish, brinjal, green chillies, mustard seeds, turmeric powder, salt, sugar, mustard oil, and other optional ingredients. Preparation: Chop the mustard greens finely, and the other vegetables into small pieces. Cooking: Heat mustard oil in a pan, add the radish, ridge gourd, and brinjal, and cook until soft. Add the mustard greens and cook until they shrink and release water. Final Touch: Mix in the mustard-chilli paste, cook on low flame for a few minutes, add a pinch of sugar, and mix well. Cook for another minute before turning off the flame. Serving: Serve the Lai Shak with boiled rice to balance the sharp bite of the mustard greens. 1 For a variation, you can add shrimp to the dish, marinate it, and fry it before adding it to the Lai Shak for a different flavour profile. |
